I love corned beef and cabbage. I may even like it better than Thanksgiving and Christmas dinners rolled together.
This year the cabbage came from my garden. Four pounds! Not a country fair winner by a country mile, but considering it was fertilized with neglect, I'm pretty happy! Oh, and it was delish!
Boiling corned beef has always been hit or miss for me and the couple times I've baked it, it's been wonderful. Ree Drummond, aka Pioneer Woman, has done it again.
